    I have a new plan for my German plate - Pfeffurnusse biscuits. Looks like they have a similar flavour profile to the suggested Spekulatius, but are a bit thicker and either iced or dusted with icing sugar instead of having a fancy press/roller to make them look pretty.

      I know it’s not what the name means, but I’d be so tempted to shape these as little white mice

        I did a mouse-shaped-biscuit Google search and it is definitely doable - sliced almond ears seem to be the preferred option.

      Pfeffernusse are yum. So are Speculaas, but pretty sure those are Dutch, so you’ve made a good call.

        From what I can tell based on my superficial Google searching Speculaas are Dutch, but there are also versions made in parts of Germany under a slightly different name. Once my textured roller arrives I might try some of those for myself anyway, as I’ll be looking for all sorts of rolled biscuit recipies to justify buying it!
