As a kid I beat the vampires in Illusion of Gaia as Will. Didn’t realize you could change.

Lies of P - nameless puppet. I choose the other ending on my first run, so my first time facing him was in ng+. Not sure if that made it harder, but yeah, that one was rough
God Of War 2 Theseus gave me way more trouble than Ares on Titan difficulty.
There might have been a mechanic I was missing but you had barely enough mana to cast all of the required spells to beat it, at least with the pickups I had found, like literally if I missed more than one lightning bolt I had to restart, and some of his spells would instantly kill you. I don’t recall the specifics of why it was giving me trouble beyond that but I do remember bashing my head against that wall for hours.
Never really had aa much trouble as that fight. Not in Souls, Bloodbourne, that fucking Theseus and his jerk friend minotaurs.
Eggman on this sonic game I had on my Nintendo ds. Shit was fucked. I never won and am forever a loser because of it. One day imma emulate it and reclaim my honour.
For me it was Psycho mantis from Metal Gear Solid. The reason being that I didn’t understood English at the time, so it was literally an impossible boss. I got frustrated with it and abandoned the game, until I found a translated version of it and replayed it and he’s actually very easy if you know what you need to do.

I love this boss, it’s not bs, just pure skill… Shame I lack any of it. Still beat him eventually.

I don’t remember there being a boss on a church roof in the DLC for Dark Souls. Do you remember the name, or description?
He starts out in a wheelchair, if I remember. (You know what, I might be thinking of Bloodborne, one of the optional bosses)

I failed at The Bloody Crow of Cainhurst though. Not really a boss, but harder than any of them.

The boss is not particularly hard but you can only face him after a full run on the max difficulty where you will likely use most of your very limited resources before the bossfight, meaning you can only take a couple hits (at best) before dying.
I barely managed to scrape together a single win with 4 boss cells. No way I’m ever gonna get further.
Fume Knight from Dark Souls 2
That stupid course in Star Wars Racer where you have to stay on a very narrow ledge. When you fall off you’re relegated to a super long detour and basically have to start over because you have no chance of winning if you fail even once.
Oh yeah I remember that one. Wouldn’t have been an issue if not for the bad steering of pods.

Hmm. Not sure. Some bosses that immediately came to mind were O&S in Dark Souls 1 and Hume in Eternal Daughter though. I think I had more trouble with the latter, but it’s been so long that I’m not sure.
It’s been a long time since I played so my memory may not be totally accurate, but the final boss in fatal frame 2. I rage quit it because it was a one hit kill, and before you get to them, you had to walk down a long hallway avoiding other enemies. It was like 5 minutes of work to get to the final boss only for him to hit you once and you have to start all over. So infuriating. The rest of the game was so much fun.
Still haven’t beaten Owl in Sekiro. Only Fromsoft game in the genre I haven’t finished because I can’t kill my fuckin’ dad. 😭
Ahhh keep going, really experiment with creating different openings for attacks. Such a great fight. And then (maybe spoilers, not sure? You probably already know that fromsoft games often have different endings / paths) figure out how to have an even harder version of that fight
Sekiro had several of the hardest bosses for me. God I love that game.
Demon of Hatred also took me absolutely ages. Days. But it’s optional so really I only have myself to blame.
For me the answer is probably Malenia from Elden Ring. Took so long learning all of her moves and still only made it through by summoning the mimic for phase 2
